POSITION SUMMARY

Moonlight Hibachi Grill & Wine Bar is looking for a creative, ambitious and experience Head Chef to lead an existing dynamic team to elevate and further develop the concept. Ideal for a candidate looking to work on their own style of cooking, develop new dishes and work with the support of the Group Culinary Director 

The Venue

A contemporary Japanese hibachi grill and wine bar in Byron Bay from the team behind Light Years. Diners are invited to enjoy the intimate surrounds with a concentrated menu showcasing flavours from classical Japanese cuisine reinterpreted in unexpected and unique ways.

About You

  • Sound communication skills
  • 3+ years experience in a fast paced environment with the ability to work calmly under pressure (essential) 
  • Experience with using deputy, financial reporting and cost control (essential)
  • Attention to detail in all aspects of the role 
  • A positive approach to other team members and FOH staff
  • Experience with asian ingredients preferred
  • Be both punctual and reliable
  • Cook and prepare dishes as per company specifications
  • Maintain food and hygiene standards
  • Being able to follow recipes and specs to a company standard
  • Leadership skills a must

YOUR RESPONSIBILITIES

Training – Assisting in Training of all Chef’s in store with the guidance of the group head.

Audits – Ensuring updates of Checklists & Jolt server is accurate and standardized across the kitchen.

Rostering – Monitor wage cost of BOH operations of your store in guidance with assigned KPI

Development & Guidance - Ensure BOH Team are using training checklists to monitor staff capabilities to ensure appropriate depth to cover staff holidays and any unforeseen leave.

Recruiting – Advise Training Manager & Operations manager of roles & recruiting required. Interview & hire accordingly for the store's needs.

Food Safety – Must ensure all Kitchen’s & Staff are trained and working in accordance with the Arcade Agency Standard & Food safety program. Reviewing Data collected on Jolt & managing all OHS aspects of the business.

Staff Meetings – Must proactively encourage regular staff meetings to ensure teams are focused on achieving KPI’s and informed in advance as to upcoming events/promotions etc.

Suppliers – Monitor and track all food costings within the store and communicate with suppliers if there is a price increase on products. Advising GHC on change in pricing and adjusting GP as needed.

Financial Performance - Overseeing all Food COGS and guiding staff in reduction of food costs and communication with suppliers.

Team Leader - Actively engage in fair and equitable workplace practices and behavior to ensure a discrimination, harassment and bullying free workplace in accordance with government regulations.
